Cartoon Network vs. Nickelodeon.

I watched both about the same amount, I wasn't terribly picky in that regard. Also watched a lot of Disney Channel.

NIckelodeon. Two reasons
1) Our basic cable included Nickelodeon. Not Cartoon Network. Wasn't until around 1996ish that Cartoon Network made its way to basic cable.
2) Mom and dad would ban Cartoon Network on a regular basis because I'd watch it... and Scooby Doo comes on and my mom really really hated Scooby Doo. She also hated Speed Racer.
There wasn't anything they morally objected to about Scooby Doo - I even asked mom what on earth she had against Scooby Doo (When I told my neighbour that mom didn't let me watch it, and she was just as confused as I was.) and she said "It's not morally objectionable - I just don't want to hear that trash anywhere."
Said neighbour had Cartoon Network becuase she had Premium cable and Cartoon Network did make its way to our premium cable, but when you had premium cable? I'm going for the bloody Disney channel.

It's a hard battle for me in deciding which one I'd actually prefer
On one hand (only counting stuff that was on when I was a kid) you've got Hey Arnold!, All That, Doug, Invader Zim, Rocko's Modern Life, Spongebob, Fairly Oddparents, Kenan & Kel, Drake & Josh, Rugrats, KaBlam, Avatar, Danny Phantom
On the other hand you've got Ed, Edd n Eddy, Powerpuff Girls, Dexter's Lab, Samurai Jack, Foster's Home, Courage, Samurai Jack, Justice League, Teen Titans, Billy & Mandy, Chowder, Clone Wars, Flapjack.
I think I probably ended up watching more Nick but I enjoyed CN shows more consistently. And if you throw in Toonami and Adult Swim, then CN definitely wins.

^ I think Cartoon Network wins, because Toonami and Adult Swim both introduced an entire generation of kids to anime.

I watched more Nickelodeon as a kid. Rugrats, Doug, and Ren and Stimpy. Not to forget Salute Your Shorts, Legends of the Hidden Temple, Double Dare, and Eureeka's Castle.
Even tonight I've been watching Avatar.
